Pinterest is my drug. The Pinterest Chronicles part III



     I couldn't help it... The day after Halloween I began prepping for the greatest of all holidays... CHRISTMAS! I seriously live for the entire month of December. The goodies, the twinkly lights... I love it all!
  Naturally the second I realized the time was upon us I re-downloaded the Pinterest app to my phone. I know what you are all thinking... "Dammit S I thought we were past this"

 I know I've disappointed you, but I couldn't help it. Pinterest just knows when I'm vulnerable... It welcomes me back with open arms, and a front page fill of beauty. I haven't been as bad this time around though. I've accepted that I do indeed suck at everything I try to make. I went into our relationship this time accepting that it was doomed to fail. It's a habit I can't break, a love that I need.
  Anyway, tomorrow I'm going to have dinner at my inlaws and I promised to make dessert. I planned on making an apple pie, but realized this morning that A) I didn't have any Crisco, and B) I wasn't going to the store on a Saturday.  I opened up my beloved Pinterest and looked for an easy pie recipe that didn't require Crisco or an insane amount of butter. I came across a recipe for "Cake Mix Pie Crust". I'm not usually one to buy cake mix because I prefer making my own, but I happened to have a box in the cabinet. It was clearly meant to be! Then I saw a really cute picture of these hand pies, and that was it. I was making them!
    I mustered up my courage and got to work. The "pie crust" was insanely simple, and only took like 2 minutes to whip together. I'm actually really excited to share this recipe, including the apple pie filling which is my own personal recipe. I will include the link to the original crust recipe at the bottom of the page!

  Cake Mix Pie Crust
 Never in my life would I have thought this would be a genius idea.  The first thing you do is empty a box of cake mix into a medium-large sized mixing bowl. If you are in higher altitudes it doesn't matter. DO NOT add extra flour.
  Then add 1 Tablespoon SOFT butter. Not melted, just soft. That is super important. Melted butter will fuck everything up. Add the 1 whole egg. Lightly mix with a rubber spatula. It's really important that you don't use a hand mixer. Using your hands really does work best.  Add the three egg yolks and mix until a dough ball is formed.

Wrap ball into plastic wrap and chill for 1 hour. 
    While the dough is chilling start your apples! 
   I started with 5 small/medium pink lady apples. Peal and chop them into small pieces.In a hot pan drop 3 tablespoons of unsalted butter. Let it melt. Add 1/4 cup brown sugar and let it simmer and caramelize. Once brown, gooey, and bubbly add your apples on top. Mix in 2 tablespoons of cinnamon, and 1/2 tablespoon nutmeg. Stir and let simmer on low heat until apples are tender, and sauce is thick. 
 Then it's time to roll the dough! Flour your counter/cutting board, and flour your rolling pin. I like my dough 1/4 of an inch wide, and I use a biscuit cutter for size. 
                  

Stuff the pies with an average spoonful.

                           Then place a circle of dough on top of the first piece. seal with a fork.
   Make sure you add a brushing of egg wash on top so it turns to a nice golden brown in the oven. Obviously since I knew my history with Pinterest I decided to do a test cookie... This is important. Do not use tin foil, just spray a dark cookie sheet. This is what happens. 
    I felt a little discouraged but kept going. The next batch I sprayed the cookie sheet itself. I placed 6 cookies on the sheet, and brushed the egg wash on. 
They went into a 350 degree oven for 9 minutes and came out perfect. The pies were golden brown and AMAZING. 


  Immediately take them off of the cookie sheet and set them on a cooling rack. Sprinkle with cinnamon sugar well still warm. 

These are the best hand pies I've ever made. The crust is flaky (Like my pinterest relationship) but somehow moist. It is a little sweet for dough, but I loved the vanilla flavor with the apple pie filling.
